PAN Restaurant Series: L'Ambassade d'Auvergne - Wednesday, 29 September, 2010 - 8 pm
Paris 3eme
You enter this rustic tavern through a bar with heavy oak beams, hanging hams, and ceramic plates. It showcases the culinary bounty of France's most isolated region, the Auvergne, whose pork products are widely celebrated.
For more than 20 years, the Ambassade d'Auvergne has been one of Paris' top gastronomic institutions. Among the many house specialties, recommendations are the chilled lentil salad, cochonnailles de la Châtaignerie (assorted charcuterie), Parlan sausages and aligot (mashed potatoes with garlic and Cantal cheese), stuffed cabbage, thickly-cut steak of Salers beef, and lamb from Lozère. Try chicory salad with apples and country ham; pork braised with cabbage, turnips, and white beans. Nonpork specialties are pan-fried duck liver with gingerbread, perch steamed in verbena tea, and roasted rack of lamb with wild mushrooms.
